I'm using one in my screenplay and I was wondering whether or not you had to make reservations before you stayed at one.

depends on the place but the two I've stayed at here in Texas; yes you had to make them in advance.

Most bed and breakfast type places require reservations, yes. If it's "off season" or winter, you may be able to walk in and get a room. Doesn't happen often, though...

Or you can just make up a bed and breakfast where you don't need a reservation.

My auntie runs one - never required guests to make reservations.

Only stayed at B&Bs in the British Isles, never made a reservation (but never had a particular place in mind, was just looking for a place to crash)
I've stayed at many: The popular, fabulous ones in great locations, you sure as sh*t better have made reservations; others, in less fabulous climes, are less exacting. The very lowest are those you can call from your cell outside the house....
