A few more I thought of while swimming:

The Jason Robards character in Pat Garrett and Billy the Kid. He has about 4 lines and 3 minutes, but the expression on his face makes it look like he needs to sleep for about 6 weeks.

Easy Andy in Taxi Driver.

Butler in McCabe and Mrs Miller. The way he strolls into McCabe's pissing ground and makes it his own is fantastic. His teenage killer offsider is pretty good too.

Ben in Blue Velvet.

Some anonymous Jamaican girl with a minute in The Harder They Come. "Preacher is a man of the Lord - but he's a man all the same".

EDIT: one I forgot - the "filth starts maggots and riots" woman in Five Easy Pieces. (Followed by the male nurse in the same film).

Can you call Hyman Roth a minor character? If so - he's on the list.

Your two leads need a ride?

They're stranded?

You gotta get them from point A to B?

You wanna show them hitchhike and then CUT TO, or do you wanna do this...

Oh man - I've got no way to prove it to you, but I've been gushing about that scene for YEARS. Absolutely hilarious.

Film is ripe for a remake, not that it's needed.

NOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO!!!!!

I'm not adverse to remakes, but this is a almost a perfect "little" film. One of my favorites, and I don't think anyone could make it better. (I could be wrong, but there it is.)

By the way, Cimino wrote and directed it, but, from what I understand, Eastwood helped quite a bit. I guess Cimino likes to agonize over shots (HEAVEN'S GATE, anyone?), and he'd want to do another take or something and Eastwood would say, "No, I think we got it", and they'd move onto the next shot.

(I think William Goldman tells that story.)

I've never seen it yet I thought, "WTF? You mean they ripped off..." and then I couldn't remember what film it was (I saw it as a youngster) - but there was a sub-character who was petrified of lightning because it ALWAYS hit him. Good comedy relief.

Kilgore in Apocalypse Now. Just the Napalm line would have been enough to make him memorable.
