I think we all agree with Adam Isaac; there are just too many good films.

Jane Eyre had some amazing lighting, but which black and white version? 18 are listed! (Not all are black and white, though.)

        How about Nosferatu?
Or some of Charly Chaplin's work, especially his serious stuff.

        The Battleship Potemkin was seminal.

Adam's list is quite thorough -- not a dud among them.

          I would add:

          City Lights
          All About Eve
          Roman Holiday
          Bringing Up Baby
          Philadelphia Story
          La Dolce Vita

and another that I always forget is B&W:

          Dr. Strangelove

and throw in the other modern filmmaker (in addition to Scorcese) who's made hay with black and white, Woody Allen:

          Manhattan
          Stardust Memories
          Interiors
          Broadway Danny Rose

Gotta call it like I see it -- Manhattan.

This isn't the best, but it's one of my favourites - Dead Man. Johnny Depp near his finest.

Streetcar is a fave, as is Psycho. Though I still can't watch it all the way through. (Pathetic, I know.) Lots of the ones already mentioned, actually. Casablanca, story wise, but probably not for its cinematography or look.

                  Fritz Lang's Metropolis.
                  John Ford's Fort Apache.
La Traversée de Paris (one of Jean Gabin's)
Cocteau's La Belle et la Bête.
                  Samurai Fiction
Kurosawa's Throne of Blood, Seven Samurai, Rashomon, Yojimbo
Adam, (if you haven't) you should check out Daibosatsu Toge/Sword of Doom from Okamoto. Splendid and man, Nakadai Tatsuya and Mifune Toshiro are truly cool in this movie!

                    shows how much you know...

I just saw this on pay per view and it was definitely not black and white...

best actress maybe... I mean, just on endurance and intestinal fortitude alone...

If you are referring to Truffaut's Les 400 coups, I do remember watching it in black and white as well. So I'm not too sure what version (???) you are referring about.
