Any favorites? I'm not talking about sex-starved movies where men chase women throughout the whole movie but films that stress a man's responsibilities toward himself, family, etc..

Re: Favorite Films That Exemplify Manhood
Check out tons of westerns and war movies past and present (moreso past).
This theme was more popular back in the Golden Age of films when most families stuck together through thick and thin and fewer single parent households existed. Most entertainment today is geared toward the single lifestyle."I ask every producer I meet if they need TV specs they say yeah. They all want a 40 inch display that's 1080p and 120Hz. So, I quit my job at the West Hollywood Best Buy."

Lots of ways to interpret the original post. Thousands of westerns and war movies...take your pick of hero-types.
In terms of theme where a person passes to a position of more responsibility you have films like ARTHUR and HAPPY GILMORE which are quite different but in general have the theme of "time to grow up." I could see JERRY MAGUIRE in this category.
You've also got themes of docile persons that get fed up... FALLING DOWN, DEATH WISH, KARATE KID.
Some others that might have the arc or theme being saught:
MR. MOM, FATHER GOOSE, SHANE, TO KILL A MOCKINGBIRD
