I'm always a fan of Danny Boyle.
I also adore Kim Jee-Woon, who directed The Good, The Bad, The Weird and I Saw the Devil. He's about to release The Last Stand with Arnold. If I could pick a director to work with right now, he'd be it.
And ever since I saw The Raid, I'm adding Gareth Evans to my list.

@emily blake: have you seen anything by Hong-jin Na? The Chaser, or The Yellow Sea? Also Mother, by Joon-ho Bong: very nice.
I personally would love to see more work from Yuki Tanada (Moon & Cherry) and Shunji Iwai (Swallowtail Butterfly).

Mother is simpler than those other films, but I liked it a lot. And The Yellow Sea probably isn't as well rounded as The Chaser, but it's still very good, IMO.
Park Chan-wook's Sympathy for Mr. Vengeance, although slower, is worth watching too, if you haven't yet.

I was talking about international movies at a couple of meetings the other day and both sets of execs agreed that Korean cinema is one of the most exciting filmmaking countries out there right now. They really push boundaries and make bold, dynamic choices...

Jee-woon Kim is also awesome, and I very much enjoyed Jeong-beom Lee's The Man From Nowhere. And, of course, Chan-wook Park. Joon-ho Bong is impressive, but I have yet to see most of his work.

I would love to have Fincher direct one of mine. Also, I do like Danny Boyle. If you have the chance see his recorded stage directed versions of Frankenstein by the National Theatre. I saw the one with Benedict Cumberbatch as the creature - was wonderful!
